Name: Jason Waterfalls

Style: Dry Hopped IPA

Abv: 5.4%

Ingredients: Pale, Cara, Dextrin | Chinook, Cascade, Amarillo | SNPA Yeast.

To kick off 10 Beers for 10 Years we realised rather than brewing the oldest beer first we wanted our beers to be released at logical times of the year, and to somewhat echo the drinking habits of the season - It'd be a tough sell releasing a red ale in the height of summer - And with the order in mind, we had to start off with a
 big hitter!

A beer that many of you will remember, but it hasn't been on our taps since 2024. It's a beer that was our head brewer Adam's first ever recipe. A beer that needs a lot of TLC.....

Here's his hazy memories of the start of his brewing journey, that led to this phenomenal beer.....

 

"I started at Southey as a brewery assistant in April 2021. When applying for the job I had certainly drunk a lot of beer in my time, but had never brewed a beer, commercially or otherwise. I spent the first few months learning as much as I could, and developed a real passion for the craft and the process.

 

 

When it got to January 2022, I was encouraged by owner/then head brewer/chief of stuff Sam, to have a crack at a recipe of my own. And this is it. I honestly can't remember my thought process when creating the recipe, but remember being really chuffed with how it turned out. I know I wanted to create something that was punchy, but super drinkable, and I think I achieved that! Beginners luck I reckon.

 

It's a crisp, dry hopped IPA. Chinook used for the bittering hop addition, for a clean, assertive bitterness. Then late addition hops and dry hopped with cascade and amarillo for citrus, grapefruit and pine notes. It's big and bold for a 5.4% beer, but not quite as harsh as a typical west coast IPA. It has the perfect level of bitterness to constantly keep you going back in for one more sip."


 

 

It's super limited to only 2 kegs on tap at the taproom, and one keg going into cans. So be sure to head down this weekend to sample beer one of ten of our Ten Beers, Ten Years!


When it's gone there's sure to be chants of "don't go Jason Waterfalls" being heard for miles.
